Chef Ayman Al-Mazroui
UAE / Dubai
Signature style: a fusion of Arabic tradition with Japanese technique.
Winning dish: "Desert Pearl" — lamb slow-cooked for 48 hours in a tandoor with a sesame-miso crust, under a date and yuzu sauce.
"Halal doesn't limit — it inspires. When you know your ingredient is pure, your creativity knows no bounds."

Indonesia / Jakarta
Signature style: vegan halal interpretations of traditional dishes.
Winning dish: "Rendang Renaissance" — a plant-based stew with a meat-like texture, simmered in coconut milk with 12 spices.
"Halal and ethical eating are sisters. I show that purity can be plant-based and incredibly delicious."

Signature style: neo-Ottoman cuisine with molecular accents.
Winning dish: "Istanbul Bazaar" — pigeon stuffed with pistachios and dried fruits, served under rosewood smoke.
"I brought back forgotten palace-chef recipes and proved that halal was fine dining 500 years ago."
